The pimpinella


The real name of the pimpinella, is green anise.
Its stem is hollow and roundish and its leaves have a long petiole at the base and a shorter one at the top. The flowers are similar to small white umbrellas and the seeds are striated and very small.
The active ingredient in the plant is the anethole with which drugs and liqueurs are prepared.
Also famous in ancient times, this plant was defined by Pliny the Elder as an element that helps sleep and safeguards the youth of the face.
The plant is native to the Middle East and can even reach one meter in height. In Sicily it grows spontaneously while in Tuscany, there are various plantations because the burnet it is cultivated for therapeutic purposes.

When harvesting takes place


The flowers must be collected when they are completely ripe and this occurs between August and September. The harvest should be done late in the morning when the flowers are not full of morning dew and should not be piled up in an envelope but placed if possible, spaced apart in a wooden box.
The flowers must be dried in a cool and dry place and when they are ready, they are lightly beaten and the seeds are collected and stored in hermetically sealed containers.
